Gỏi Cuốn – Summer Rolls

Carina Tran, executive chef and co-managing partner of Huế Restaurant, shares her recipe for Gỏi Cuốn, a Vietnamese summer roll of rice paper wrapping filled with veggies, fresh herbs, lean meat and shrimp.

Ingredients
  

  • 1 pack Rice Paper (we like Bamboo Tree brand)
  • Prepared Dipping Sauce: Peanut Sauce, Hoisin or Traditional NuocCham

Various Fillings:

  • Thin Sliced Sirloin
  • Shrimp – Peeled/Deveined
  • Onion – Thinly sliced
  • Vermicelli Noodles – cooked
  • Green Leaf Lettuce
  • Cucumber
  • Carrot
  • Cilantro
  • Chives
  • Red Pepper slices

Instructions
 

  • Saute beef, shrimp, onion in butter until cooked.
  • Dip rice paper into warm water and lay flat on the plate.
  • Layer beef, shrimp and desired fillings into wrapper and roll tightly . The rice paper will be very sticky so best to roll one at a time.

Notes

This is a great dish to enjoy with large groups of people on a hot summer day. It is fresh, healthy and simple. My family typically gathers around a table top griddle to cook the protein as we are eating, talking and enjoying each other's company. It is interactive and allows everyone to fill their rolls to their own liking.
